Baked Tacos

We saw a similar recipe online and thought, hmmm . . . we will have to try it. So glad we did! We prepared our Baked Tacos a little differently. These were so, so, SO GOOD! What was really great about it was how much extra taco filling you can get following this recipe. This recipe really stretches out two pounds of meat into enough meat to feed 1/2 dozen people 2-3 tacos each! It is really, really, really good! If you’re not a fan of refried beans (the hubby is not), don’t worry because once the meat mix is all put together, it really transforms the beans into something amazing!

Ingredients:

  • 15 – 6 inch round corn tortillas (tortillas are already baked in photo above)

  • 2 lbs ground beef

  • 1 – 16oz can refried beans

  • 1 – 15oz can of tomato sauce

  • 1 pkg taco seasoning

  • 2 cups shredded cheese

Directions:

Remove one oven rack and place over sink. Preheat oven to 350 degrees. Wrap tortillas in a wet paper towel (that was wrung out, so soaked but not dripping) and microwave for 30 seconds. Now they are a little more moist. Time to get them even more flimsy. Turn the cold water on over your sink. Working with one tortilla at a time, quickly wave a tortilla under the running water. You are making the tortilla damp but again, not soaked.

Drape the tortilla over 2 of the metal rungs on the oven rack you have over your sink. Repeat until all tortillas are draping. Place the entire oven rack back in the oven. Bake until tortillas are crispy (approximately 8-10 minutes). Carefully remove tortillas from the oven rack and set aside. Leave oven on.

In a large skillet, brown the ground beef. Drain the grease.

Add the refried beans, tomato sauce and taco seasoning.

Carefully spoon the meat mix into your prepared taco shells. I used a 9×13 pan and was able to get 10 tacos in it and then used a 7×7 foil pan to put the 5 remaining tacos in. Use all of the filling evenly as possible between the 15 tacos.

Evenly sprinkle all of the cheese on top of the 15 tacos.

Bake for 10-12 minutes until heated all the way through. Add whatever fixings you like on top of your baked tacos. We added shredded lettuce and sour cream.

The Baked Tacos were really fantastic! Another recipe that stretches the ever shrinking dollar allowing you to feed more for less!
