Cheesy Potato Casserole is one of our favorite side dishes! For our family of 4 (mind you, the 4th person is only 3 years old), we can eat an entire 9×13 pan within a couple of days! This pic below really captures just how cheesy these potatoes are! The buttered crushed cornflakes add just the right texture to this wonderful dish!

1 Bag of Frozen Hashbrowns, Thawed
1.5 Cups Sour Cream
2 Cans of Cream of Chicken
1 – 8oz Package of Shredded Cheddar Cheese (or any mix of cheese that contains cheddar like Colby)
1.5 Cups of Crushed Cornflakes Cereal
4 Tbsp of Melted Butter or Margarine
Preheat oven to 350 degrees. Spray a 9×13 baking dish (glass or metal) with non-stick cooking spray. In a large bowl, mix together the hashbrowns, sour cream, cans of cream of chicken and shredded cheese. Spread out into the prepared baking pan. Sprinkle the crushed cornflakes all over the top. Pour the melted butter evenly over the cornflakes. Bake in oven for 1 to 1.5 hours (our oven is closer to 1.5 hrs).
Serves 12 (or in our home, 3.5 lol)
