Breakfast Muffins

Looking for a quick but fancy looking breakfast idea? Look no further! Our Breakfast Muffins are the answer! Our bacon-wrapped bites are filled with cheesy scrambled eggs and makes for a great meal!

*Printable Recipe: Breakfast Muffins

Ingredients:

  • 6 slices of thick-sliced bacon

  • 6 eggs

  • 2 tablespoons milk

  • 1/4 teaspoon of onion powder

  • Salt & pepper to taste

  • 1/2 cup of shredded mild cheddar cheese

  • Diced green peppers

  • Diced Onions

Directions:

Preheat oven to 375 degrees. Fry bacon slices till about 3/4 cooked (bacon slightly crisp and you are still able to “bend” the slices). Drain on a paper towel. Spray a normal size muffin pan. Position bacon against the edges of 6 muffin areas, set aside.

In a medium bowl, combine eggs and milk. Whisk in salt, pepper and onion powder. Stir in cheese. If your whole family likes onions and green peppers, stir in these vegetables at this time. How much is up to you. Our family is split on the veggies so we omitted the veggies in this step for now.

Carefully ladle the egg mix into the muffin tins till each is approximately 3/4 full.

If your family is like ours and split about veggies, you can add a small amount of green peppers and onions to half of the muffins like we did below.

Bake your muffins for approximately 25-30 minutes

until the egg mix is set and no longer liquidy (is that even a word? LOL).

Remove with a spoon or knife and serve! Easy peasy and it sure looks elegant! 8 servings which is perfect for our family of four.

FYI: These heat up well in the microwave! To avoid a “rubbery” egg, wet a paper towel and wring it out. Wrap the wet paper towel around a muffin and heat up for approximately 30 seconds! Hubby took two to work for a “breakfast on the go!”
