Magical Peanut Butter Cookies

Found this gem of a cookie recipe online and have since adapted it a tiny bit. The magic in the Magical Peanut Butter Cookies is that there is no flour! These don’t last long so be sure to eat 2-3 or um, 5-6 of them as soon as they come out of the oven before sharing it with your family, lol!

Ingredients:

  • 1 cup creamy peanut butter
  • 1/2 cup of sugar
  • 1/2 cup of brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 large egg
  • 1 teaspoon baking soda
  • 2 tablespoons of sugar

 

Directions:

Heat oven to 350 degrees. Cover your baking sheet with parchment paper. With an electric mixer in a large bowl, mix together the peanut butter, sugars, salt, egg and vanilla until well combined. Beat in baking soda until well combined. Roll dough into 1” balls (it will be sticky and oily so I throw on disposable gloves and muddle through this step because it is well worth the hassle, lol). Put the 2 tablespoons of sugar in a small bowl. Arrange cookie balls onto your prepared baking sheet approximately 2 inches apart. Smash the cookie with a fork creating a cross-hatch pattern (see photo above).  Using a spoon, sprinkle your cookies lightly with sugar. Bake until slightly puffy and golden (about 6-8 minutes). Allow cookies to cool on baking sheet for 5 minutes and then transfer them to a cookie rack to cool completely.
