Coconut Macaroons

GEDSC DIGITAL CAMERACoconut Macaroons were of course on my 2012 Christmas Baking Madness list. It is one recipe I do make every Christmas. I just love the sweet crunchy coconut exterior that has a moist, chewy and insanely sweet center. And everything is better drizzled in chocolate! This recipe was given to me by my mother-in-law. So it’s a family thing. This literally is one of my all-time fav Christmas cookies!

Printable Recipe: Coconut Macaroons

Ingredients:

  • 2 egg whites

  • 1/2 teaspoon vanilla

  • dash salt

  • 2/3 cup sugar

  • 14 oz sweetened bag of coconut flakes

  • small amount of cocoa melting disks (approximately 20)

Directions:

Preheat oven to 350F.

In a medium-sized bowl, beat egg whites, vanilla and salt with a hand mixer on medium speed.

Beat until there are soft peaks.

Add sugar and beat with mixer until there are stiff, glossy peaks.

Fold in coconut flakes.

Drop spoonfuls on parchment paper.

Bake for 15-20 minutes until edges are just golden.

Melt cocoa chips in a glass bowl at 30 second increments until smooth. Drizzle chocolate over the coconut macaroons. I drizzle mine by dipping a fork into the melted chocolate and swinging the fork back and forth over the coconut macaroons like a pendulum. I repeat dipping and swinging in different directions until the coconut macaroons are evenly covered in chocolate. Allow the chocolate to set. Store in an airtight container.
