No Bake Cookies are a staple in our household. We make these cookies often and they are always on my Christmas baking list. So of course this cookie appears on my 2012 Christmas Baking Madness list. This cookie is really simple to make however easily screwed up as well. It is important to measure the ingredients out exactly and the amount of humidity around your home greatly affects how well the cookie sets up. With relatively a small amount of ingredients and prep time, this cookie is a winner year round!
Printable Recipe: No Bake Cookies
2 cups sugar
1/2 cup butter
1/4 cup powdered, unsweetened cocoa
3/4 cup milk
1/2 cup peanut butter
1/2 teaspoon vanilla extract
3 cups oatmeal
Cover table or counter area with wax paper.
In a large pot, add butter, sugar, cocoa and milk.
Bring to a rolling boil over medium heat. A rolling boil cannot be stirred away. Continue boiling for one more minute.
Remove from heat and add peanut butter. Stir until well combined. Add vanilla and stir until well combined.
Add oatmeal and stir until oatmeal is evenly coated.
Using a one-inch cookie scoop, drop spoonfuls onto wax paper. Gently smash down the scoop of cookie with the back of the cookie scoop to flatten it out a little.
Allow cookie to set up.
Store in an airtight container.
