Turtle Cookies

Since a couple recipes didn’t call for all of the ingredients in one package, I was left with some extra ingredients. I had 1/2 a bag of milk chocolate chips, 1/2 cup of minced pecans and a little over 1/2 cup of caramel bits. I hate to be wasteful and I know if they go into the pantry that they will never be seen again. So I created a turtle cookie that used these 3 ingredients up! This fit in nicely making the 12th cookie on my 2012 Christmas Baking Madness.

Ingredients:

  • 2 – 1/4 cups flour

  • 1 teaspoon cornstarch

  • 1 teaspoon salt

  • 1 cup butter, softened

  • 3/4 cup sugar

  • 3/4 cup packed brown sugar

  • 1 teaspoon vanilla extract

  • 2 large eggs

  • 1/2 cup Caramel Bits

  • 1/2 cup minced almonds

Directions:

Preheat oven to 375F. Cover cookie sheet with parchment paper. Place Caramel Bits in a food processes to mince up the caramel. Place almonds into food processor to mince up almonds. In a medium-sized bowl, combine flour, baking soda and salt. Stir till well combined. Mix butter, sugar, brown sugar and vanilla extract in a large bowl until creamy. Add one egg and stir well. Add 2nd egg and stir well.

Gradually stir the flour mix into the wet mix. Stir in Caramel Bits and almonds. Fold in milk-chocolate chips. Using a one-inch cookie scoop, scoop out balls of dough and place it on the cookie sheet. Bake for 9-11 minutes or until edges a light golden brown.GEDSC DIGITAL CAMERA
